May 11 & 12

What does every great mum want for Mother’s Day this year?…  Charcuterie,  did you think I was gonna say flowers?  Come on now, but you can pick up some flowers too while at the farmers’ market and duck liver pate, duck pate with cherry and pistachio, pork pate with figs, smoked quail, smoked pork chops.  Or how about some duck crepinettes, toulouse sausage, bratwurst, or boudin noir.  Something quick and easy?  How about corned beef hash, meatballs in tomato sauce, duck confit, seasoned lamb chops, dry aged lamb and goat racks, and BBQ rubbed baby back ribs.  As always fats and broth, beef jerky, and a few other items.   Just a heads up out there I will not be at the farmers’ market next week, May 18th & 19th.  

Happy Mother’s day mom, thanks for everything, and Happy Mother’s day to all the mom’s out there.

April 20 & 21

Spring is here, if it has been awhile since you have gotten out to the market it’s time to see what’s poppin’   Then pop on over to say hi and grab some thing to pop on the grill, like Stuffed Quail, lamb leg roast, goat chops, or some sausages like boudin blanc, boudin noir, mexican chorizo, spicy duck, or kefta.  

Also this week I’ll have goat sugo, meatballs in tomato sauce, smoked quail, duck confit, smoked duck breast, and smoked polish links.   

Oh and Rabbit!  I got a few rabbits this week, so I made a pate with apricots and some rillettes.   Also I’ll have duck pate with cherry and pistachio, duck liver pate, trotter terrine, beef jerky, bacon, a little bit of goat bacon, stocks and fats, get out there, it’s gonna be nice.

Saturday only this weekend.

What are you doing this Saturday?  How about heading to the farmers’ market and grab a couple of things to throw on the grill and watch the USA in the World Baseball Classic and pretend it is summer.  I’ll have several grill ready items like brined pork chops, stuffed quail, BBQ rubbed baby back ribs, smoked pork chops, and plenty of sausage like boudin blanc, italian, toulouse, merguez, and breakfast.   

Last week Annabelle stopped by with some wonderful flageolet beans so I made cassoulet, also back this week Meatballs in Sauce, duck confit, smoked duck breast, ciccioli, duck liver pate, pork pate with figs, liverwurst, trotter terrine, maple cured ham, and some dry aged goat loin chops and racks. 

As always Duck fat, leaf lard, beef jerky and a few other treats.  See you this sunny Saturday.  Again no market this Sunday.  I’ll be back in Kensington on 3/17.  

Also don’t forget to order your corned beef, it’s moving fast, like a leprechaun.

Corned Beef for St. Patrick’s Day

It’s the time of the year when people drink green beer and eat corned beef and cabbage.  So order online so you don’t have to wait on line and I’ll hold beef for you to ravage.  

You can pick up at the Berkeley farmers’ market on 3/16 or in Kensington on 3/17.

First cut (leaner) $10/#  Fatty cut $9/#  Whole Brisket (10-13#) $9/#

Your brined brisket comes with a spice package to add while cooking.

Super Harbrawl? Sunday

That’s right the big weekend is here, the unofficial holiday weekend that is the Super Bowl.  So come out to the farmers’ market this weekend before the game and get some stuff to fill your super bowl, like chili with beer braised beef,meatballs with sauce, cassoulet, sugo carne, or corned beef hash.  I also made a batch of hot dogs, chili dogs?  also, boudin blanc, duck crepinettes, toulouse, polish sausage, and merguez.  I almost forgot to mention… Goat!  We have goat again from McCormack Ranch, I’ll be tying up some roasts, cutting some chops, and sausage too.   I also received a pig from Riverdog farm this week, so I’ll also have some nicely seasoned loin roasts of pork.  

I will also have smoked duck breasts, pork pate with figs, duck pate with cherry and pistachio, duck liver pate, duck confit, liverwurst, head cheese, duck rillettes, bacon, beef jerky, duck stock, pork stock, leaf lard and duck fat.  It is going to be super nice so come out and get your supplies for the weekend Berkeley, downtown from 10-3 on Saturday and Kensington 10-2 on Sunday.

For January 26 & 27

Come out and enjoy the sun this weekend at the farmers’ market I’ll have a few things to help warm you up over the cold nights ahead like; Sugo Carne, a braised pork and beef sauce good over pasta, smashed potatoes, or steamed kale.   Chili with Beer Braised Beef, and a few pork loin roasts.  Also try the new sausage variety Thai pork or stick with some of the classics like Mexican Chorizo, Italian, Bratwurst, or Breakfast Links.  I’ll also have some Smoked Pork Chops, Bacon, duck Rillettes, Duck Liver Pate, Pork Pate, Duck Pate, Head Cheese, Liverwurst, Brined Pork Chops, Stuffed Quail, Duck Confit, and a few more tasty treats.  As always I’ll have Duck Stock, Pork Stock, Leaf Lard, and Duck Fat.  See you out there this weekend.

Happy New Year!

Slowly getting back into the swing of things, ready for great new year ahead.   For this weekend I’ll have some chili with beer braised beef, good for the cold winter weather.  Also some lamb sugo, pork loin roasts, and goat rack.  Also bratwurst, boudin noir, spicy italian, kefta, and duck crepinettes for sausages.  Duck pate, duck liver pate, trotter terrine, beef jerky, lamb bacon, and corned beef hash.  I’ll have a couple more tasty treats too.  So bundle up and head out to the market this weekend and I’ll see you there.

Last market of 2012.

Thanks to everyone that has come out to the markets rain or shine this year.  It has been a blast making food for the community and I’ll be back in January with more yummy food meats.  So get on out in the rain this weekend and pick up some finishing touches for your holiday parties like, duck pate, duck liver pate, pork pate, guinea hen pate, trotter terrine, bresaola, hot coppa, duck rillettes, ciccioli, or cotechino.  I’ll also have lamb bacon, pork bacon, liverwurst, and duck confit.  For sausages I’ll have kefta, boudin blanc, boudin noir, toulouse, breakfast links, and spicy duck sausages.  Need something for dinner?  I have brined pork chops, cassoulet, lamb sugo, pork loin roasts, lamb saddle with a mushroom stuffing, a couple goat racks, corned beef hash, stuffed quail and a few small goat leg roasts.   Don’t forget to stuff those stockings with a meaty treat of beef jerky too.  I’ll see you all this weekend…. rain or shine.

Wait, Thanksgiving already?

Yes, the last weekend to get out to the farmers’ market before national eating day.   So are you thinking something other than turkey?  How about Quail stuffed with foccacia, chestnut and sausage.  Or how about cassoulet, with beans from Annabelle, toulouse sausages and duck confit.  Or a pork loin roast, also have a few dry aged lamb racks and loin chops, also will have lamb sugo and a couple other roasts and braise items.                Need something else I’ll have loose sausage for thanksgiving stuffing, breakfast links, toulouse sausage, polish links made with beef and bacon, lamb crepinettes, duck crepinettes, spicy duck links, and bratwurst.  Also lots of pates like pork with fig, duck with cherry and pistachio, duck liver, or chicken galantine, duck rillettes, spicy trotter terrine, head cheese and ciccioli.  There will still be more, so come out this Saturday and Sunday, place your orders now  scott@thefifthquarter.co     See you this weekend.

November 3 & 4

For this weekend lots of pork goodness by way of Riverdog Farm and the awesome pig we got this week.  I’ll have a few loin roasts with the skin on and a couple with a nice fat layer without skin.  I’ll also have head cheese, green chile sausage, italian sausage, stock and a couple other treats.  Additionally I have more lamb sugo, some nice dry aged lamb loin chops and 4 bone racks, and a little merguez.  Spicy duck sausages and duck crepinettes, duck live pate, duck confit and I have five large cassoulet.  Oh and herb brine pork chops, stuffed quail, and many other treats, no tricks.   Good job giants.
