June 2 and 3
Hey everyone, for the weekend; Bratwurst, beer and bacon sausage, breakfast sausage, duck crepinettes, italian sausage, and limited amounts of kefta and merguez. I received a pig from Riverdog farms so I will have some loin roasts, a couple bacon wrapped pork tenderloins with dijon and herbs, and some shoulder roasts. Lamb from McCormack Ranch will be rack chops, loin chops, sugo, and a couple saratoga roasts. Smoked beef tongue, pork rillettes, duck liver pate, pork pate with figs, bacon, beef jerky, head cheese, trotter terrine, and for the Kensington market foie gras torchon. Only one month left and counting. As always I will have duck fat and duck stock, freshly rendered lard and a couple other treats.
