Holiday Weekend

Summer, already?  Is it just me or is everything happening early this year?  That means summer fruits and veggies at the market and charcuterie…  Smoked duck breast, hot dogs, boudin blanc, stuffed quail for the grill, toulouse sausage, and boudin noir with monukka raisins.  Also Maple ham, lamb bacon, good ol’ pork bacon, smoked beef tongue, liverwurst, duck crepinettes, head cheese, duck confit.  Back this week I’ll have cooked meatballs in sauce great with pasta or on a crusty roll.  I will also have a couple lamb leg roasts and some oven ready pork shoulder roasts.  It should be nice this weekend so come on out and see what’s new. 

By the way The Fifth Quarter will now be at the Berkeley Thursday evening market from 3-7 Shattuck @ Rose.  Last night was our first night and it was great.  Nice seeing everyone last night and see you there next week.

May 19 & 20

For the weekend…  Louisiana style boudin, maple breakfast links, italian links, kefta with lamb and beef, and bratwurst.  Ciccioli, pork sugo, corned beef hash, rack of lamb, lamb loin chops, pork loin roasts with esplette and herbs, bacon wrapped pork tenderloin with dijon and sage, the pork is from Riverdog Farm and the lamb from McCormack Ranch. Also more liverwurst, duck liver pate, smoked beef tongue and head cheese.  Duck pate, pork pate, beef jerky, smoked ham hocks, and bacon.  LArd and duck fat, poultry stock, pork stock, and Foie Gras Torchon for Kensington.  See you this weekend.

May 12 & 13

Who is ready for some damn good lamb?  My first pair came this week from McCormack Ranch and they are nice, how nice?  I would give it to my mother and you can too.  Avoid the long wait for Mothers’ Day brunch and cook fer u’r mum, there are so many options.  Like bacon, breakfast sausage, smoked duck breast, ciccioli, pork and beef sugo, several lamb roasts, lamb shanks, liverwurst, duck liver pate, pork pate with figs, duck confit, kefta, merguez, duck crepinettes, boudin noir, smoked beef tongue, beef jerky and a few other items. 

I will also have stuffed quail you can reserve some if you do so by Thursday at 11:30pm. 

The quail are $9 each and are stuffed with a sausage and bread stuffing with spring onions from Happy Boy Farm. 

Also the first batch of cured sausage!!  Dry Spanish Chorizo I will have some at both markets, and Foie Gras Torchon for Kensington only.  See you this weekend.

May 5 and 6

For this weekend; Mole chili, duck confit, smoked beef tongue, duck liver pate, duck pate, pork pate, pork rillettes, head cheese, pancetta, stuffed quail and maple ham.  

For sausages this week we will have Boudin Blanc, Toulouse, Bratwurst, and Duck Crepinettes. 

I received a pig from Riverdog Farm this week so I will have some pork loin roasts, BBQ rubbed spareribs, and bacon wrapped pork tenderloin. 

Also duck fat, lard, duck stock, beef jerky, and a few other things.  It is going to be very nice this weekend, come check out the great spring produce at the Berkeley farmers’ market from 10-3 on Saturday or Kensington farmers’ market 10-2 on Sunday and then stop by and say hi.  See you all there.

For 4/28 & 29 

Hey there ladies and gents, looks like another sunny weekend so why not head out to the farmers’ market and pick up some goods.  With the NBA playoffs starting and the NHL playoffs in full swing, not to mention baseball pick up some links for the grill like bratwurst, Louisiana style boudin, smokey beer links, or duck crepinettes.  Thinking brunch?  I’ll have corned beef hash, bacon, Mexican chorizo, maple ham, and pancetta.  Also mortadella, smoked duck breast, trotter terrine, head cheese, goat bacon, liverwurst, pork pate, duck pate, duck liver pate, and smoked beef tongue. As always beef jerky, stocks and fats, and a few other treats.  See you this weekend.

For 4/21& 22

Where are you going to be this weekend?  With our first taste of summer like conditions why not head to the Berkeley farmers’ market on Saturday or Kensington on Sunday. Here is a little of what I’ll be coming with, bratwurst, toulouse, boudin blanc, and kefta all great for the grill.  I received a pig from Riverdog farm on Wednesday, so I have a few small racks of BBQ rubbed spareribs, boneless loin roasts, and a few other fun things.  Mole chili, I made the mole sauce last night and it came out really nice making the rest tonight.  $8/pint  $15/Quart.  Also canadian bacon, american bacon, and goat bacon, trotter terrine, head cheese, duck confit and smoked duck breast. There is still more, come out this weekend and enjoy the bounty of the farmers’ market, support small business saturday, and get a ton of awesome food!  What more needs to be said?  See you there.

For the weekend starting 4/14

Yesterday I received the last two goat till October so come out and pick up your favorite goatastic treats like goat bacon, kefta, saratoga roast, shanks or necks for braising, chops and racks for grilling.  Also more maple breakfast links, hot dogs, and chicken Italian links.  Trotter terrine is back!  Also head cheese, smoked beef tongue, pork rillettes, baked maple ham, BACON, and pork pate with figs.  I will also have more of that yummy pork sugo, (slow cooked pork with carrots, onion, green garlic, wine, pork broth, herbs and spices) serve over pasta or sauteed kale and dinner is served.  Also I will have a little corned beef hash.
