Lambs tongue, Liverwurst, and Boudin Noir. Oh My!
It’s back to the basics this week, with old favorites like head cheese, liverwurst, pickled lambs tongue, duck liver pate, pork pate with figs, pork and chicken pate with bourbon soaked sour cherries and hazelnuts ( hey that’s something new!) and smoked duck breast. Duck confit, lots of duck confit, great with a salad, pasta, omelette, quiche, risotto or with potatoes fried in duck fat. How about a juicy sausage? I’ll have Boudin Noir, Duck Crepinettes, Spicy Duck, Toulouse, Mexican Chorizo, and Bratwurst. I’ll also have some Herb-Brined Pork Chops and Quail with Focaccia Stuffing. Plenty of lard and duck fat, pork stock and duck stock and beef jerky. Come on out and enjoy the sunshine, enjoy it too much and the rain will come!
In the thick of summer now, good time to tune in to your favorite team, get the grill fired up and enjoy the cool evening. How about some BBQ rubbed Tri-tip, baby back ribs, or porterhouse pork chops. Grab a few links like bratwurst, mexican chorizo, green chile pork, or salsicce fegato. Crepinettes with duck and figs too. Some old favorites this week too like pickled lamb tongue, maple ham, and smoked beef tongue. Plenty of duck rillettes, duck liver pate, ciccioli, trotter terrine, and duck confit. Stocks and fats, beef jerky and several other items… Oh did I mention Bacon? yes that’s right Bacon. Liverwurst, trotter terrine, country duck pate, duck liver pate, smoked duck breast, smoked quail, smoked pork chops. For roasting/grilling; pork loin roasts, lamb chops, brined pork chops, rack of lamb, and three small goat leg roasts. Stocks and fats, beef jerky, and a few other treats. It was a fun week back in the kitchen, and it looks to be a great weekend. Come check out the great offerings from all your favorite vendors. I’ll have plenty of Kefta, LAmb Crepinettes, Toulouse, and Green Chile sausages. Also duck confit, smoked duck breast, duck rillettes, duck pate, and duck liver pate… did I mention that I got a couple ducks too? I will also have a few nice little roasts for the oven or grilling. Hello summer. How have you been? We’ve missed your stone fruits and warm sun, fresh cut flowers and long days, and your great moon rises. So head down to the market this weekend and grab something for the grill or a bit of pate to share with your friends and check out the moon. Tomorrow evening the moon will be at its closest distance to earth making the full moon a supermoon! So grab some duck crepinettes, merguez, toulouse, thai pork sausage, or a bratwurst. Also goat chops, pork loin roasts, boneless lamb leg roasts, or smoked pork chops. I will also have meatballs in sauce, Jamaican jerk goat, ciccioli, smoked duck breast, duck liver pate, spicy trotter terrine, duck pate, and pork pate.
